Conegliano Valdobbiadene – Prosecco, also called Conegliano Prosecco or Valdobbiadene

Prosecco, is a wine with a controlled and guaranteed designation of origin (DOCG) produced only in the hills of the upper province of Treviso between 150 and 350 m above sea level. , particularly in the hilly area between Vittorio Veneto and Valdobbiadene. Conegliano Valdobbiadene – Come to

Prosecco DOCG can be produced in the still (non-effervescent) or sparkling (moderate effervescence) version, while the superior mention is added to the sparkling version only. The sparkling cru of the denomination, or the micro-zone that encloses the parcels in Cartizze, takes the name of Valdobbiadene Superiore di Cartizze. As for the other DOCG (Asolo Prosecco), the Conegliano Valdobbiadene – Prosecco DOCG should not be confused with the generic Prosecco DOC nor with other IGT wines based on glera grapes. The historic sparkling wine method is the Martinotti-charmat from which the Brut, Extra Dry (which is the traditional and most consumed version) and Dry versions are obtained based on the concentration of residual sugar after refermentation in the autoclave.

A fundamental role in The elaboration of the method is played by the Enological School of Conegliano. The Conegliano Valdobbiadene method of sparkling wine was born, developed by Antonio Carpenè, a reworking of the Italian method. Here are the distinctive elements. After the harvest, the grapes, harvested by hand in the individual vineyards, are taken to the cellar to start processing. Look at the other wineries in the Veneto and Italy
